Ensure Classes are Credit Only
Ensure that all your services are categorized as packages or subscriptions exclusively. This ensures that if a cancellation is provided, only a credit will be returned to your account.
Create a class or appointment
Go to pricing settings
Select Pricing options --> Package & Subscription Only

Keep in mind by default all classes are non-refundable.
Additionally, you can set your booking windows so that the cancellation option becomes unavailable at the same time the class opens. This setup prevents clients from canceling online, effectively enforcing a non-refundable policy for your classes.
